India is the largest producer and exporter of cashew kernels in the world. Over 65 per cent of the world export of cashew kernels is accounted for by India. Indian cashews are consumed in as many as 60 countries all over the world, the major markets being the United States, the United Kingdom, Japan, Netherlands, Australia, Canada, Germany Hong Kong, Singapore, New Zealand and Middle East countries. The Indian cashew kernel is well acclaimed for its good quality, taste and appearance.

Indian cashews are available with prominent importers in USA, Canada, Japan, the Middle East, Singapore, Australia, U.K. and other EEC countries.

There are regular shipping facilities from India to all ports of the world. Major shipments from India take place through Cochin port. Other ports are Tuticorin, Mangalore, Chennai and Mumbai.

  • Kernals are dried to 3% moisture content before they are packed.
  • Drying is necessary to extend shelf life and prevent fungal and other infections.
  • Nut kernals of export quality are vacuum packed in tins.

3 cups cashews
3/4 cup white sugar
1/2 tsp. dried crushed chili
1/2 tsp. cayenne pepper
1/4 tsp. salt
2 Tbsp. canola or other vegetable oil

Preparation method :

Step 1: Spread cashews out on a baking sheet and place in the oven at 350 degrees. Allow to bake until cashews appear golden brown in color (15-30 minutes) If your cashews are already roasted, allow to bake for 10 minutes (this will just crisp them up nicely).

Step 2: Remove from oven and slide nuts onto a plate or onto your counter-top to cool slightly.

Step 3: Place a wok or large frying pan over medium-high heat. Add the oil plus the chili flakes and cayenne pepper. Stir the chili into the oil.

Step 4: When oil is hot, add the nuts. Stir-fry until nuts are coated with chili oil (about 20 seconds).

Step 5: Add the salt and sugar. Stir-fry about 1 minute, or until the sugar has dissolved. Don't over-cook, or the sugar will start to burn.

Step 6: Remove from heat. Slide nuts onto a sheet of wax paper, parchment paper, or tin foil and allow to cool. While cooling, do a taste-test. Add another sprinkling of dried chili flakes if not spicy enough. Add a little more salt if you prefer them saltier.

Step 7: Enjoy your sweet and spicy cashews on their own as a snack, or with beer or party drinks. These nuts are also excellent in salads, such as my Green Papaya Salad. Or serve them over ice cream along with my Thai Sweet ChiliIce Cream Dessert. Store your glazed nuts in a covered container or jar (canning jars work well and look pretty too). ENJOY!


Ingredients for Cashew Halwa Receipe

Cashew - 1/2 kg
Milk - 1/2 litre
Sugar - 1/2 kg
Ghee - 1 tbsp
Cardamom powder - 1 tsp

Preparation method of Cashew Halwa

Step 1: For preparing cashew halwa, boil milk and soak the cashew nuts for about 30 minutes.

Step 2: Grind the cashew into fine paste.

Step 3: In a thick pan pour the ground cashew paste and cook.

Step 4: Stir constantly, adding ghee.

Step 5: Add cardamom powder and mix well.

Step 6: Remove from the flame when the mixture becomes a smooth lump.

Step 7: Transfer the contents on to a greased plate and spread evenly.

Step 8: After 5 minutes cut pieces out of it.

Step 9: Cashew halwa, yummy sweet dish is ready.
